韓式水晶粉 Korean Crystal Noodle

綿綿春季,明媚天空下的粉嫩櫻花,你是否在享受這座城市的悠閑時光,還是仍然節奏緊密地生活。其實再忙碌亦需要偶爾的停歇、感受, 今天精心推介的這道菜肴,它精巧、剔透,口感豐富香濃卻不油膩繁復,是一款不得不試的春季美食―韓式水晶粉。

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

材料 Ingredients

 

水晶粉 Crystal Noodle........................................100g

薄牛肉  Beef Slices............................................ 20g

海苔絲 Seaweed................................................ 5g

芝麻 Sesame...................................................... 2g

蔥絲 Green Onion.............................................. 5g

蒜粒 Garlic......................................................... 10pcs

 

醬料 Sauce | 韓式醬料 Korean Sauce

  • 韓式辣椒醬 Korean Spicy Sauce................ 4 tablespoons

  • 韓式烤肉醬 Korean BBQ Sauce................  2 teaspoons

  • 味醂  Mirin (みりん).................................... 4 tablespoons

  • 壽司醋Sushi Vinegar.................................. 6 ½  tablespoons

  • 麻油 Sesame Oil........................................ 1  tablespoon

  • 蒜油 Garlic Oil............................................ 2 tablespoons

 

日式芝麻醬 Sesame Dressing                   2 tablespoons

 

做法 Procedures

  1. 燒水煮開後放入水晶粉,煮5-6分鐘後取出,用冷水衝洗後,吸干多余水分。Boil water in a large pot. Once the water stars to boil, add the noodles and boil them for 5-6 minutes. Rinse in cold water to cool down the noodles and drain the water.

  2. 取適量薄牛肉,燒水灼熟後撈起(燒水中加入數滴食油可使牛肉口感更豐富),吸干水分。Thinly slice the beef. Boil some water and dip the beef in for a few seconds. (You can add some oil to enrich the flavor). Drain the water out.

  3. 將10顆蒜粒搗碎放入熱油中,當蒜蓉轉淺黃色時關火;將蒜蓉撈起並吸干多余的油份,置於一旁的器皿中;再將煮好的蒜油到在水晶粉上。Smash 10 cloves of garlic. Transfer to a pot, add oil, and heat until it turns yellow. Remove the smash and pour the oil onto the crystal noodles.

  4. 將現成的芝麻醬和調製好的韓式醬按照三比七的比例加入水晶粉中,用筷子攪拌均勻後上碟。Add sesame dressing and Korean sauce with 30/70. Mix the noodle and the sauce gently and evenly with chopsticks.

  5. 將多余的蒜油和醬汁添加到牛肉中,輕輕握成牛肉球後,置於水晶粉上. Add remaining garlic oil and sauce into beef slices. Put them on the top of the noodles.

  6. 再撒上適量芝麻和制好的蒜蓉。最後在出餐前,擺上適量海苔絲和翠綠蔥絲,色香味美的韓式水晶粉即完成。Add sesame and pre-cooked garlic smash. You can add some seaweed and green onion before serving.
